Today's Recipes - Steamed Banana Cake


Ingredients:

  • 20 pieces banana leaves (12cm x 10cm)
  • 4 - 5 pieces fully riped banana
  • 75gm plain flour
  • 75gm palm sugar
  • 35gm cornflour
  • 4 tablespoon thick coconut milk
  • Salt
Methods:
  • Prepare banana leaves to soften it by dipping into boiling water for approx. 30 seconds, then drain and wipe dry with paper towel.
  • Mash bananas together then stir in the plain flour, cornflour, sugar, coconut milk and salt. Add more coconut milk if mixture is too thick and more plain flour if it is too moist. Adjust until mixture has a soft dropping consistency.
  • Position one piece of the banana leaf at a time, the long side facing you. Spoon one heaped tablespoon of the banana mixture onto the center and fold, overlapping both sides, to enclose the mixture, then tuck both ends under. Continue for the rest of the ingredients.
  • Arrange banana packets in a single layer in a steamer, and place it over rapidly boiling water and steam for 20 - 30 minutes, adding more water if necessary after 10 - 15 minutes.
  • Serve warm or at room temperature.
